Boo Berry Muffins

These muffins are moist and full of booberries and so very yummy! 

I love making these around Halloween and adding some cute little eyes and making these muffins spooky cute. But nix the eyes and it really is the perfect any time muffin.

Here’s the recipe:

1 3/4 cups all purpose flour 
2 1/2 tsp baking powder
1 tsp baking soda
2 tsp cornstarch

2 eggs
1/2 cup vegetable oil
1 cup sugar
3 Tbsp lemon juice + zest of a lemon
1/2 cup buttermilk

Mix dry ingredients together. Mix wet ingredients together. Then combine your dry ingredients with your wet ingredients and stir until blended together. 

Add in 1 cup of frozen blueberries. I like using wild blueberries. They are smaller and deeper in color than regular blueberries. 

Pour batter into greased or lined muffin tins. Bake at 350 for 24-26 minutes.
