I wanted something dark and rich and fruity and this totally hit the spot! It’s tastes just like a molten lava cake but instead of eating it with a spoon you are drinking it.
I used fresh raspberries but frozen work just as well in the recipe.
This recipe serves 2!

I almost used whipped cream but I opted for vanilla bean ice cream and again, I think that was a really good choice. It added sweetness and creaminess to the dark chocolate and the tart berries!
Here’s the recipe!
6 oz dark chocolate – chopped (I like 70%)
3/4 cups heavy cream
1/4 cup raspberries – mashed (fresh or frozen)
1 1/4 cups whole milk
Dash of vanilla and sea salt
Add the chocolate to a saucepan over medium heat and let the chocolate melt. Stir frequently to avoid burning the chocolate. When the chocolate is melted, add the heavy cream and mix well to make a ganache.
Add the mashed raspberries and milk. Stir frequently until combined well. Once fully combined, add a pinch of sea salt and a dash of vanilla to taste.
Now get ready to assemble! Start with a generous scoop of vanilla bean ice cream in the bottom of you hot chocolate mug. Then pour the very warm raspberry hot chocolate over the top.
Now decorate with fresh berries, dark chocolate, and a little dusting of powdered sugar!
