Dark Chocolate + Raspberry Cookies!

Dark Chocolate Raspberry Cookies:
1 cup butter – browned
1 cup dark brown sugar
1/2 cup white sugar
2 tsp vanilla
2 eggs
1 tsp baking soda
1 tsp baking powder
2 1/2 cups all purpose flour
1 – 1 1/2 cups of semi sweet or dark chocolate chunks
1 cup frozen raspberries
Here’s what you’ll do:
Get your butter browning right away
Once butter has browned and has a toasted/nutty aroma, set aside to cool.
In a large bowl or stand mixer, add the sugars, vanilla, and eggs. Mix well.
Once the butter has cooled for 5-10 minutes, slowly add the butter to the sugar mixture. Mix well.
Take a deep breath and enjoy the smell of that browned butter/sugar mixture. 🤤
Add the baking soda, baking powder and flour slowly to the mixer and mix until well incorporated and a soft dough has formed. Add in 1 to 1 1/2 cups of chocolate. I like dark chocolate best with the raspberries but semi sweet is also great! You can use chips, chunks, or chop your own. Mix by hand until it looks evenly distributed among the dough. Then add 1 cup of frozen raspberries. Now work quickly so they don’t all melt and get goopy.
Using a cookie scoop, scoop dough out and set the dough on a lined tray. Repeat until all your dough has been scooped into balls. Add extra chocolate or raspberries to the top of the dough balls if they look a little sparse. Cover the tray with plastic wrap and refrigerate for 30 minutes.
Preheat your oven to 350°
Once your oven is hot, line a large baking sheet with parchment or wax paper.
I only bake 9 cookies per tray so I don’t overcrowd my tray.
Bake for 11 minutes. The dough might seem a little underbaked in the middle but the middle will firm up slightly as it cools.
Add more chocolate and/or raspberries (fresh or frozen) immediately if the cookies could use a little more decorating.
Let them cool and set up a little more for 5-10 minutes. Then dive on those lil babies!! 🍪♥️🍪
