Cookies for Conference is the best tradition! These little guys are a crowd pleaser!
Today they were rated 20/10 by one family member.
And another family member cried and told me he loved me when he saw which cookies I made!
Here’s the recipe! Enjoy!
Ingredients
- 1 cup salted butter, softened at room temp
- 1/2 cup creamy peanut butter
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 and 3/4 cups all-purpose flour
- 2 Tbsp corn starch
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup old fashioned whole rolled oats
- 1 and 1/4 cup m&ms – put 1 cup in a blender and break them up into small pieces – add 1/4 cup of M&M’s that aren’t broken. I used the Easter variety.
- 1 cup semi-sweet chocolate chips
Instructions:
- Heat oven to 350° F.
- Cream the butter in a large mixing bowl, with an electric mixer on high speed until well creamed. Add the peanut butter and mix until creamed with the butter. Add the sugars and mix on high until creamed with the butter. Add eggs and vanilla and mix until just combined.
- Add the flour, corn starch, baking soda, and salt and mix just until the dry ingredients are incorporated. Add the oats, m&ms, and chocolate chips last, and mix on low speed to distribute throughout the dough.
- I like to break up 1 cup of the M&M’s in a blender or in a ziplock bag with a rolling pin.
This adds really great texture to each bite! - Scoop the dough into balls using a medium/ small cookie scoop. I like to freeze the dough for at least 15-20 minutes before baking. You don’t have to chill the dough but I love the shape of the cookies best when I freeze the dough!
- Place the dough balls on your lined cookie sheets. Leave some space between each cookie.
1 bake 12 to a tray. - Bake for 9-10 minutes at 350°. The cookies will look soft and almost underbaked. They are baked! And they are soft! 🙂 Let them cool for about 20 minutes on the tray. They will continue to set up.
