Tomato Soup

👻 Why are ghosts such messy eaters? Because they are always goblin’!! 👻

I go just a tad crazy turning every meal we eat a little spooky! Get ready for an overload of fun and easy ways to play with your food this month. 

Tomato + Ghost Soup is a favorite around here. I used tomatoes and basil from our garden which makes this soup so fresh and extra flavorful. The little ghosties are the cutest, am I right?? ☺️ 

Heres what you’ll need:

  • 4-5lbs fresh tomatoes
  • Olive oil
  • 1 medium onion
  • 4ish cloves of garlic…you do you. 
  • Veggie or bone broth 
  • 2 Tbsp chopped fresh basil
  • Salt, pepper, and oregano to taste. 
  • Heavy cream to garnish 

Here’s the recipe: 

  • Cut tomatoes in half and spread on a lightly olive oil greased sheet pan. Salt those beautiful tomatoes! Roast at 425° for 18-20 minutes. 
  • While tomatoes are roasting, peel, chop, and sauté 1 onion and 4 cloves of garlic in 1tbsp of olive oil. 
  • Once tomatoes are roasted, add them to a blender and blend those babies uppp! Transfer blended tomatoes to the pot. 
  • Add 2 cups of veggie broth or bone broth and give it a good stir. 
  • Bring pot to a boil and then turn it down immediately to a light simmer. Stir lots. Let those flavors really cook together. Add chopped basil. Cook for 20 min. Serve that yummy soup up and give it a beautiful creamy garnish and then a few little ghosties. 
  • Souper easy, right?? Indeed it is. 😊
